Fatty piece from a 5kg size spanish mackerel is roasted rare at low temperature for increased moist. Accented with pureed and roasted seasonal vegetables.

Standard seasonal crab menu. Freshly picked snow crab is steamed over high temperature, ovary, eggs, meat flaked from the shell are mixed and served with homemade pasta. Mildly sour and sweet tomato is cooked for more flavor.   

Panna cotta mixed with Mastunami rice starch from Noto for sweetening and roasted green tea for mild aroma. Served with ice-cream cake mixed with chestnuts, crepe with sprinkle of chestnuts and rosemary leaf.
