When opening its lid, you will see seafood such as sea urchin, salmon-roe, and crab, gorgeously topped over [suitoro] (Japanese yam from Matsushiro, Nagano prefecture, mixed with a broth). Enjoy the mild taste of steamed yam with a tender and fluffy texture. 

Assorted appetizers mainly with the ingredients from Nagano prefecture, with the sense of the season. Enjoy exquisite appetizers, with Nagano's rich-colored high-quality traditional vegetables and Shinshu Beef. This dish will surely increase your expectation towards the next dishes.

They use rare buckwheat flours from [Togakushi, Nagano prefecrure] and [Maruoka-cho, Fukui prefecture] which are ground with a stone mill. Enjoy the rich-flavored soba (buckwheat noodles), the owner's hand-made, as the last dish of the course. It goes with the aromatic dipping sauce that luxuriously uses dried bonito, dried mackerel, and kelp.
