The restaurant's menu uses a selection of local ingredients, including organic Hitachi vegetables delivered directly from local farmers, Hitachi beef, the pride of Ibaraki Prefecture, and local fish purchased almost daily. With a little less flamboyance, the restaurant offers Japanese cuisine that combines traditional Kyoto cooking techniques with ingredients nurtured by Ibaraki's rich natural environment.
