Hoping to create smiles with delicious food from Tamba, Mr. Tamura opened Watahan with his family.

Mr. Tamura was born in 1966 in Osaka and raised in Kobe since the age of 7. At 22, he started his career as a chef at a Teppanyaki (iron griddle cooking) restaurant. He learned about cuisine, customer service, and meat, then opened Watahan in 1993. He has endeavored to create a friendly restaurant with warmth and hospitality for his guests. As the manager, he and his younger sister are currently looking to celebrate the 30th anniversary of the restaurant's opening, and he is running the restaurant to apprise the new generation of the deliciousness of Sanda beef.

Chef Ozawa's starting point was the flavor of the chicken rice he ate as a child. He trained for 8 years at a French restaurant in Ginza and at a steakhouse in Roppongi. In 1978 he opened Milky Wave in his hometown Kawagoe. This year is the restaurant's 37th year in business.

天野 大介Daisuke Amano

Mr. Amano fascinates with his skillful style of courses, using Edo-mae techniques and its own unique twist.

He was born in 1976 in Tokyo. Owner of Sushi Amano Watari. As a child, he often went to his father's family home in Nishi-Izu, where he became familiar with the delicacies of the mountains and sea. His naturally growing interest in food and cooking led him to a professional career. After training at a sushi restaurant in Nishiogikubo, he participated in the opening of Sushi-sen in Jiyugaoka in 2000. As a manager, he developed it into a popular restaurant, and in 2011, he moved to the Nishi-Azabu branch. In 2021, he opened his current restaurant in Nishi-Azabu, where he got the opportunity. He demonstrates the culmination of his career as a sushi chef with warm hospitality.

Shinji Kotaki was born on July 13th, 1979, in Asahikawa, Hokkaido. His father worked in the livestock business, so Kotaki's relationship with meat began from birth. These early years were formative for him, as his ability to pick out good meat developed naturally through being exposed to various products. After graduating high school, he went on to culinary school and then began working at Hanzomon, run by his father, where he is now representative director. His abilities extend beyond meat, as he also has a strong sense of what defines a good tare (dipping sauce), and has honed special techniques for flavoring meat.

A chef who started a Sushi chef career after experiencing traditional Japanese cuisine.

Mr. Koichiro Suga was born in 1972 in Fukuoka Prefecture. He jumped into the food and beverage industry as he was interested in cooking. He started his career at a Japanese restaurant. After that, he improved his skills at ryokans (Japanese-style hotels), hotels, and traditional Japanese cuisine restaurants. Although he has been focusing on Japanese dishes, he also has been studying sushi. At 37, he started working at Tshubakitei in Hotel De Shiki in Kurume City. He then became a manager. After working for about 8 years, he left the company. In December 2017, he opened his own restaurant, Jukusei-zushi Koshiro, as the head chef.

He was born as the 2nd son of a popular Japanese BBQ restaurant in Asakusa and grew up with Japanese BBQ 6 days a week. When he was 18, he dined at some 50 restaurants and approached [Chez Pavot Blanc] in Nishi Azabu with wonderful food and service, to start his culinary career. He further broadened his experience at [ENOTECA] and went to Italy in 2002. After he came back and worked as a chef at some restaurants in Tokyo, he opened [CARNEYA] in 2007.

林 竜次Ryuji Hayashi

He made his middle school dream a reality by becoming a head chef at the young age of 32.

He was born in 1973 and raised in Tokyo. His fascination with professional cooking started in middle school and led him to specialize in the culinary arts during his high school years. He went on to spend seven years studying at several traditional Japanese restaurants, which included Takamura in Roppongi, Egawa in Ginza, and Ajisai in Akasaka. Then, because of a connection he made in Mie Prefecture, he moved there at age 25 to start a job at Sazanami. After seven years on the job, he was promoted to a head chef at the age of 32. He makes his way to local fisheries every morning for fresh ingredients and takes advantage of his veteran skills and judgment to deliver the best food that Toba has to offer.

広田 昭二Shoji Hirota

A French cuisine chef who draws out the best of the ingredients by facing them with earnestness.

Mr. Hirota was born in 1955 in Kochi. After studying at a well-known restaurant, he moved to the U.S. and gained much knowledge and experience. Upon returning to Japan, he served as the executive chef at Hotel Seiyo Ginza, and currently, he is the executive chef of the winery restaurant Zelkova. His motto is "Enjoy seafood when you go to the sea, and enjoy mountain food when you go to the mountains." He has been working faithfully with fresh ingredients from Yamanashi and using French techniques to create dishes that make the most of the flavor of the ingredients.

Mr. Sumiya was born in 1960 in Aichi and raised in a fishing family. His parents' house also ran an agriculture business, so high-quality fish and vegetables were always close to him. So, he naturally entered the culinary world because of his interest in food. After graduating from high school, he worked at a Japanese restaurant and then honed his skills in Japanese cuisine at various restaurants, such as Japanese restaurants and Kaiseki restaurants. In 2007, he opened his dream restaurant, Otobashi Sumiya. Every day, he devotes himself to "creating a restaurant where diners can fully enjoy the season's delicacies."
