He was born in 1969 in Sendai city, Miyagi prefecture. As a child, he helped out in the yakiniku restaurant started by his grandmother. Gaining experience over the years, he decided to branch out and open his own shop, the Yakiniku Sansuien. Gaining fame for its high quality meat and excellent cuts, a second branch, the Yakiniku Sansuien East Entrance was opened in June 2014.

A penchant for cooking during his elementary school years sparked Terashima's desire to become a professional chef.

Hailing from Hokkaido, Terashima had an interest in food even when he was still in elementary school, and could frequently be found trying out new recipes in the kitchen. In 1992, he opened his own bar, where he was enthusiastic about not only his drinks menu, but also his food menu. After 21 years of managing the bar, he decided to try something new and reopened the bar as Taishuizakaya Nichibei on November 12th, 2014. Terashima's vision for his restaurant is that it will be a place where customers can relax, no matter who they are or what kind of background they have, much like the places he used to visit in Shitamachi in Tokyo, where he lived in his younger years.

宮原 瞬Syun Miyahara

From Ginza to Paris and now to Nihonbashi, Mr. Miyahara weaves seasonal flavors with the skills he honed at the renowned restaurant "Kojyu."

He was born in 1981 in Tokyo. The owner of "WaKi Shun." He worked at a Japanese restaurant, "Rokkon," in Nishi-Azabu, where he learned the basics of Japanese cuisine. He then moved to a Michelin-starred restaurant, "Ginza Kojyu," where he honed his skills under the guidance of Chef Toru Okuda. In 2011, he became the head chef of the sister restaurant "Ginza Okuda." In 2013, he went to France. From 2013 to 2018, he worked as the head chef of "Paris Okuda" and introduced the charm of Japanese cuisine to the French people. After returning to Japan, he resumed his position as head chef at "Ginza Okuda" before founding his own restaurant in Nihonbashi in February 2023.

When he was 19, he started his career at a hotel in Yokohama. After that, he gained a lot of experience with Western cuisine at a hotel in Tokyo and a French restaurant. The depth and charm of the local culture he learned in Tuscany

He was born in Kanagawa prefecture in 1974. When he was young, he loved to eat, and began working part-time at a restaurant when he was 16. When he was 20, he started working at an Italian restaurant in Kohoku ward, and officially started his career. When he was 24, he went to Italy, and trained there for four years focusing on Tuscany. After returning to Japan, he took on the role of a chef in an affiliated restaurant in Nishi-Azabu, "VINO DELLA PACE". He became the head chef of "ristorante la Tenda Rossa" when he was 29. Eleven years later, he has now grown into the best Italian chef in Yokohama, according to many people.

His first step toward his professional cooking career came twenty years ago when he went to a French restaurant in Kyoto and one of the people he went with happened to know the owner and chef, who ended up letting him see the kitchen for himself. Seeing the kitchen in action like that motivated him deeply, which enticed him to head to Kobe and start developing his professional cooking skills at a French restaurant there. He then went on to train further at Les Anges in Ginza and The Georgian Club in Nishiazabu. After he gained a wide repertoire of experience, he moved up to his current position at Mori French Restaurant.

Born in 1975, a native of Kato city in Hyogo prefecture. A part-time job as a dishwasher gave him his start in the industry, and by the age of 18 he aspired to become a chef. While training up his skills at Japanese and pub cuisine, he also built up experience as a skilled manager and staff supervisor. Although by that point he was able to compete with the best of chefs, he decided to move back to Hyogo and open his own restaurant. As of August 2013 he became our head chef here at Restaurant Sakuraya.

He was born in 1980 in Yamanashi. Grew up watching the back of his father, a chef. After training at a Japanese restaurant and a fugu restaurant, hoping to share the Japanese culture and the taste of Japanese ingredients, he joined his father's restaurant, Hamakko Yokomachi. As the second generation, he has renovated and developed the restaurant into a place where people can enjoy both Japanese and Western food. He enjoyed making things from an early age and was particularly captivated by cooking. He would often cook with his mother for his whole family and it made him happy to see their smiles as they ate. After graduation, he found a job but was unable to forget the joy of cooking and the smiling faces of people eating delicious food, so he entered the restaurant industry. He searched for a place where customers' reactions could be seen and found an izakaya (Japanese bar) with an open kitchen, where he accumulated work experience.
