A3 - A5 grade Ishigaki beef and Yanbaru beef are a couple of the premium cuts of [Okinawan beef] served at Kou, one of Okinawa's finest shabu-shabu (sliced meat parboiled with vegetables) specialty restaurants. The top recommendation is the [Okinawan Wagyu Beef Suki-Shabu], made with the dashi (broth) from sukiyaki (hot pot stew). The stew is simmered for a shorter period of time than usual, which is key to preventing the succulent umami (Japanese savory taste) of the meat from leaking out. An entire assortment of Okinawan ingredients are on full display in dishes like the [Agu Pork], characterized by a moist, tender texture and an intrinsic touch of sweetness, the fresh [Akadori Chicken from Kumeshima Island], and other fresh picked vegetables grown in Okinawa.

Kappo Ren is a restaurant that serves a multitude of different kinds of kappo (Japanese-style cooking) cuisine like tempura, sashimi, and various charcoal-grilled dishes, all of which you'll have the opportunity to see prepared right in front of you. You can't go wrong with any of the dishes made with Kuroge Wagyu beef like the [Wagyu Oba Maki] and the [Kuroge Wagyu Beef Shabu Shabu Wan]. The [Wagyu Oba Maki] is a tempura dish prepared by cutting thick slices of Wagyu beef, wrapping them in perilla leaves, then deep-frying each one. The [Shabu Shabu Wan] also involves thick slices of Kuroge Wagyu, except it's prepared by dipping the slices in a dashi (broth) of concentrated umami flavors, then serving the dish in an elegant owan (a small Japanese bowl).
