Their ingredients are carefully selected by the head chef, who has over 30 years of experience in the industry. Seasonal seafood is purchased every morning directly from fishing ports, such as those from the Genkai Sea, for ultimate freshness. For lunch, diners can enjoy yari-ika (spear squid) sourced from Yubuko Port (Yobuko-ko) and tora-fugu (tiger blowfish) from Shimonoseki, as well as other fresh seafood straight from the restaurant's live tank.
