Wagyu
beef and other meat dishes are a must-try when visiting Japan. The quality of
wagyu beef is known around the world, and the cooking methods and serving
styles are evolving in a variety of ways. In this issue, we will introduce
five meat restaurants in Nagoya where you can savor carefully selected,
delicious Wagyu beef and brand-name pork in a sophisticated space with a
great atmosphere.
1. Pes.
Pes. offers dishes prepared with skills honed in Central and South America and Europe. The "Ceviche," a famous Peruvian dish, brings a citrusy, authentic flavor. The "Asado," a South American barbecue grilled over wood, adds a unique touch. The "Genovese," representing Genoa, Italy, is a standout. The restaurant's original specialty is "Nori-maki", a fusion of sushi and Wagyu beef. This flavorful dish is made by wrapping Wagyu beef and condiments with Japanese nori (seaweed).
There are a beautiful array of seasonal dishes that combine Japanese and French culinary techniques. To fully enjoy the marriage of seasonal ingredients and brand-name Japanese beef, we recommend the 13 course menu (reservation required).
