Shutoku 2nd Branch is located near the Tsukiji Outside Market, which is popular among tourists. It is one of the best places to enjoy Edomae sushi using fresh seafood from the Toyosu Market. In addition to carefully selected ingredients, Hidetoku uses sushi vinegar made from a blend of several types of red vinegar and rice vinegar, which is not available outside the restaurant. Gyunikuzushi Kinitan offers beef sushi, a collaboration between a butcher and a sushi chef. The course offers a new world of sushi that combines famous beef brands such as Sendai beef and Omi beef with fresh seasonal fish procured from all over Japan. The "Uni Dog," which is a hot dog-like roll of uni (sea urchin) and wagyu beef, is a specialty.
Upon entering the restaurant, the first thing that catches the eye is the counter made of beautiful Kiso Hinoki cypress with its intricate wood grain. The space created by the combination of the fragrant white wood, the subtle gold effect, and the Ajiro ceiling, a traditional Japanese ceramic art, creates a special moment.
