If you're in Hakata Station, you can hop in any taxi and say “to Motsukou, in Gofuku-machi,” and they'll know what to do. Established in 1978, Motsukou's motsu nabe goes against classic versions like soy sauce or salt-based soup. Instead, they use an original recipe where the ingredients are boiled in a chicken bone soup and flavored with a homemade vinegar soy sauce. This unique flavor has been enchanting their customers for almost 40 years. This hot pot includes 4 types of offal - small intestines, omasum (the third stomach of a cow), abomasum (fourth stomach of the cow), and heart - and is topped with dumpling wrappers. You can finish it off by making it into champon (noodle dish) with lots of added sesame. This final touch makes their motsu nabe completely unique, from the start till the end.

Just cross Showa Street (Showa-dori) and on the 2nd floor of the building right in front of Hotel Ascent Fukuoka, you'll find Motsunabe Mizutaki Yonbankan. Known as the lunch mecca of Kita Tenjin during the day, this casual place offers delicious nabe dishes from Japan and Korea. The proprietress will welcome you with a smile. Her [Motsu Nabe] is made with offal from Miyazaki beef, a brand of Kuroge Wagyu (a type of high-quality beef) that's won awards for consecutive years from the National Wagyu Registry Association. The serving is huge, and its flavor is sweet and truly addicting. Their counter seats are suitable for solo diners on the way back from the office or small groups of customers. If you come with your family or friends, opt for the table seats or the tatami rooms. It's a nice restaurant for all kinds of situations.

Choose your favorite motsu nabe from 3 flavors:  soy sauce, miso, or shabu. The most popular one is the basic soy sauce flavor. It's made with motsu (innards) from domestic Wagyu (a type of high-quality cattle), which is characterized by a tender and flawless texture. This restaurant is recognized that it often appears on many TV shows, and sometimes celebrities dine in, too! If you want to try other motsu-based dishes, try the addictive rich flavor of their [Ganso Motsu Gyoza] (dumplings). Although it gets quite crowded during dinner, you should be able to easily find a seat during the day. At lunchtime, there is a great selection of reasonably-priced items on the menu, such as the [Gyu-don] (rice bowl dish topped with beef) that's highly recommended for costing only 500 JPY.

Mansakuya was founded in 1989 and is located very close to the Chikushi Gate of Hakata Station. Here, you can have a rare sukiyaki-style (hot pot stew) motsu nabe. At first, you'll be given a standard version, then you can eat with raw eggs to enjoy the change in the flavor. The innards are carefully cooked, resulting in a flavorful dish that will soothe the fatigue of the day. While your motsu nabe cooks, you may want to nibble on the [Su Motsu]. Inside a stack of onion slices, you'll find super tender offal! These tender and crunchy pieces of offal are seasoned with a sublime ponzu (citrus-seasoned soy sauce).
