On October 17, 2024, the Michelin Guide announced "Michelin Guide Tokyo 2025," showcasing selected restaurants and dining establishments in Tokyo. This year, new three-star, two-star, and one-star restaurants have emerged, continuing to symbolize the evolution of a world-leading gourmet city. The total number of restaurants featured this year is 507, with 64 new entries. New Michelin Green Stars and restaurants offering dessert courses have also been introduced.
Tokyo has been the city with the most Michelin-starred restaurants in the world for 18 consecutive years.
The new three-star restaurant is SÉZANNE. It received one star in the 2022 edition, two stars the following year, and is now featured with the highest rating in the 2025 edition. Executive Chef Daniel Calvert offers unique dishes by combining classic French techniques with his experiences in London, New York, Paris, and Hong Kong, along with Japanese ingredients. The restaurant is located within the Michelin-key hotel "Four Seasons Hotel Marunouchi Tokyo," providing a place to experience both a special stay and cuisine worth traveling for.
The new two-star restaurant is Tempura Motokichi, which has elevated its rating from one star. The standout feature of the tempura served by Motokichi Kazuhito is the batter, which has been scientifically analyzed for lightness and is tailored to enhance the flavors of the ingredients. It challenges the conventional wisdom that tempura should be served hot, focusing on providing it at temperatures suited to the ingredients, reflecting the evolution of the times.
The new one-star selections include three restaurants that have raised their ratings: PRIMO PASSO, Yakitori Takahashi, and Héritage by Kei Kobayashi, along with 10 newly listed restaurants: Yama, Sano Sushi, Kappo Muroi, Yotsuya Mineura, Higashiyama Muku, Hakunei, CYCLE, apothéose, Hortensia, and Saucer.
Additionally, from the new culinary category "Creative," Yama has received one star, and Haruka Murooka has been listed as a selected restaurant. This marks the first time a restaurant specializing in fruits and desserts, offering freshly made desserts, has been featured in the Japanese Michelin Guide.
The new Michelin Green Star has been awarded to Shojin cuisine Daigo, bringing the total to 12 selections. Shojin cuisine is a type of Japanese food that originated as meals for Buddhist monks adhering to precepts. It conveys the message that vegetarian dishes made from vegetables and grains, which do not waste ingredients, are kind to the mind, body, and environment. Daigo has been featured since its first year, maintaining a commitment to sharing teachings through its cuisine.
There are 13 new Bib Gourmand listings, including three ramen shops, two sushi restaurants, one tonkatsu restaurant, one Japanese restaurant, one Italian restaurant, and five French restaurants, all of which offer distinctive dishes that provide satisfaction beyond their price.
Furthermore, the selected restaurants introduced starting in 2024 now total 227, with 41 newly listed restaurants.
This year, there are a total of 15 newly starred restaurants.
