Their most precious dashi soup stock here at Tanukiya. You can savor it most simply and directly with the kake udon (thick wheat noodles). They make the dashi stock from kombu kelp harvested near Hokkaido's Rebun Island, and when their guests hear that, some are shocked that they would use such high quality kombu as soup stock. But while they offer reasonable prices, they are dedicated to not making compromises where they shouldn't. Just because they call themselves a "self" udon (thick wheat noodle) restaurant, it doesn't mean that they don't pay attention to the guests, and they endeavor to get the freshly made food out on time. They also remember the faces and preferences of the regulars and work hard to ensure that you enjoy yourself. In the vegetable tempura they do their best to use locally harvested produce, like lotus root from Tsurajima in Kurashiki and sweet potatoes from Naruto. 10. Reichan
“Ika kyodai” (squid brothers) contains raw squid and squid tempura (fried). You do not have to be a connoisseur to fall for this delicious dish, in which the smell and taste of raw squid and the texture and flavor of the fried squid can be savored. Take cabbage or scallions for example, which change in quality depending on the season. Here, they source them based on the best areas depending on the time of year. The pork, eggs, noodles and sauces were sought out to best fit with okonomiyaki (Japanese savory pancake). They strive for excellent in-store service, so they take your order while you stand in line and begin preparing it before you are seated. The goal is to feed you quickly while still preparing each dish with the utmost care. The gold badge is only awarded to members of the grilling staff who passed the grilling test.
