Various experience from famous Trattoria to a 3-star sushi restaurant.
He was born in 1976 in Tokyo. Influenced by his good cook mother, he liked cooking since he was a child. Deciding to [do what I want to do most] when choosing his future career, he entered a cooking school. After graduating from the school, he started working at [CHIANTI] in Itakura. Later, he moved to [Trattoria MIKITA], and became a chef at the main restaurant for 4 years. Building up sufficient experience, he travelled to Italy. Returning to Japan, he broadened his experience at [Sushi Yoshitake] he had some connections, and became a chef at [Osteria da K.(kappa)].

- The French restaurant [Abysse], which is known as Iwasu, is different in type, but it is also studied as a restaurant that deals with seafood. Pairing with sake to match the food, and the composition of the food is wonderful. It is an impression that many ingredients are used in one plate, but I mix ingredients with various methods, such as powder and cream, and I am impressed by the unity.

- Speaking of high-quality restaurants, one of the recently impressed shops is Yurugijo Uehara's Il Plegio. Everything from the first amuse to the dessert was delicious. The work is polite to the details. I felt that every part of the plate had a meaning, like shape, texture, and temperature, as it was why I added mint to the topping of a certain food. The balance of taste and the way of combination were excellent restaurant.

- While there are many Italian restaurants that tend to be salty, [Melgrano] offers delicate and well-prepared dishes. The bread is all handmade, and the commitment is amazing, from grissini to all-hard hard bread. A shop that you may want to visit as many times as you like every season.

- Under the guard, [Ajibo] has an atmosphere like a Chinese restaurant in an authentic Chinese town. There are plenty of dishes and menus using sheep skewers and vermicelli. There is also bio wine, and it is a style that you can bring it from the refrigerator by yourself. There is also a large amount of food, so you can enjoy the delicious bio wine and authentic Chinese taste in large numbers.
