Our specialty Carbonara "Udon" (wheat flour noodles), which combine a soup stock made from bonito shavings and bacon fried in butter, have been strongly praised by many many people. The reason for their huge popularity may lie in their secret flavor, the Japanese-style soup stock which all Japanese are constantly longing for on some level. We use many ingredients that we take much pride in, but if we had to choose a couple that we value most, it would be either our seasonal vegetables or "mentaiko" (fish roe). For our udon noodles, we use high-quality 'Shinmenkyokaiden' noodle flour to create noodles with a springy and smooth texture. We are dedicated not only to preparing excellent food but also to providing great service and creating an atmosphere where our customers can feel relaxed and happy throughout their time in the restaurant. We get our mackerel delivered to us by air from Hamada harbor in Shimane Prefecture, so their freshness is guaranteed. Our restaurant is run by a company that operates a number of businesses in Shimane, so we have a pipeline to local fishing harbors there. Starting with the popular rosy seabass, our freshly-caught seafood stock arrives by air every morning. Savor the delights of the Japan Sea to your heart's content. Our establishment only seats around 40 guests, which keeps the place intimate. We also get rave reviews from the locals who stop here on their way back from work or from shopping. Our cook struggled with Karaage and Tamagoyaki when he was a rookie chef, but practice makes perfect! He learned through trial and error and gradually he improved the flavor of the dishes to the point that they became some of his signature dishes. Now you can savor the results of his hard work.
